The phospholipid composition of donkey milk fat was evaluated by HPLC/ELSD. Among glycero- and sphingoPL, PE was the most concentrated one, followed by PC and SM. The presence of lactosyl and glucosyl-ceramide was detected for the first time. Ceramides were identified by LC–MS/MS. The donkey milk fat contained more PL and cholesterol than the ruminant milk fat.
