Zein particles accumulate at water-water interfaces in gelatin/dextran aqueous mixtures. Particle accumulation at the interface is explained on the grounds of particle-polymer interactions. Particle accumulation at the interface is accompanied by aggregation. Particle aggregates form a stable interfacial particle-rich layer.
