Some physicochemical properties and fatty acid profile of crambe oil were investigated. Crambe oil methanolysis was studied by Response Surface Methodology. A mathematical model was developed for predicting the transesterification yield of the crambe oil. The impact to food industry is little due to the high content of erucic acid in crambe oil in its scientific controversy of toxicity. The fatty acid profile of the crambe oil yields high stability in the biodiesel derived.
