Occurrence and ecological distribution of Heat Resistant Moulds Spores (HRMS) in raw materials used by food industry and thermal characterization of two Talaromyces isolates
Sexual aspergilli were overwhelming in strawberries (99% of the heat-resistant mycobiota). Talaromyces spp. prevailed in lemon cells (73% of the heat-resistant mycobiota). Penicilli and Neosartorya spp. prevailed in blueberries (71% of the heat-resistant mycobiota).
