Structural diversity of aqueous heavy oil emulsions determines the scatter of their rheological properties. High HLB surfactants give rise to water/oil emulsion matrix permeated by channels of water/oil/water emulsion. Apparent viscosity of such multiple emulsions at high shear rates is reduced by 10 to 50 times compared to initial crude oil.
