Identified conditions for gelatin nanoparticle synthesis with native and denatured gelatin. Under the conditions employed in nanoparticle synthesis, gelatin shows a two step denaturation. Demonstrated thermo-responsive behaviour of gelatin nanoparticles prepared with native gelatin.
