Optimizing germination conditions to enhance the accumulation of bioactive compounds and the antioxidant activity of kiwicha (Amaranthus caudatus) using response surface methodology
Germination increased phytochemicals and antioxidant activity of kiwicha. Optimal conditions (26 °C and 63 h) were identified by response surface methodology. Hydroxycinnamic quinic acid derivatives were the most abundant phenolics. Prediction models showed good correlation with experimental data.
