Pilot scale extraction and spray-drying formed less complex arabinoxylan structure.

Spray-drying decreased esterified ferulic acid (e-FA) value in arabinoxylans (AX).

AX from laboratory had lower hydrodynamic radius and formed more viscous solutions.

Esterified ferulic acids (e-FA) were important for arabinoxylan gelation capacity.

Useful aspects for scaling up AX extraction from maize fiber were reported.
