Effects of high hydrostatic pressure, ultraviolet light-C, and far-infrared treatments on the digestibility, antioxidant and antihypertensive activity of α-casein

High pressure, UV-C, and far-IR treatments improved the ACE inhibitory activity. One 5-min cycle at 200 MPa led to the highest peptide yields and digestibility. UV-C (15 min) treatment caused the highest DPPH radical-scavenging activity.
