Maximum extraction yield of pectin was 15.6 ± 0.5% at optimal conditions. Optimum extraction conditions were 90 °C for 79.8 min with LSR 23.3 and pH 1.3. Carrot pomace pectin is classified as low methoxyl pectin. Carrot pomace pectin showed a suitable emulsifying activity (60.3%). Carrot pectin solutions exhibited viscous and pseudoplastic behavior.
