Acid inactivation of non-adapted/acid-adapted Salmonella enterica strains was studied. The adaptive acid tolerance response of S. enterica is strain-dependent. The effect of acid adaptation on the inactivation curves’ shape was strain-specific. Acid adaptation decreased the strain variability of Weibull model parameter δ. Acid adaptation increased the strain variability of Weibull model shape parameter p.
