Simultaneous characterisation of silver nanoparticles and determination of dissolved silver in chicken meat subjected to in vitro human gastrointestinal digestion using single particle inductively coupled plasma mass spectrometry
Silver and AgNPs speciation during human gastrointestinal digestion was performed. AgNPs transformation occurs during salivary, gastric and intestinal digestions. AgNPs and dissolved silver coexist in the digestion fluids. 13% of the AgNPs spiked meat chicken reach the intestinal wall. The proposed method allows accurate AgNPs sizing and quantification in complex extracts.
