Inorganic arsenic is the critical species for risk assessment of dietary arsenic. It dominates in food of terrestrial origin whereas it is a minor species in seafood. The most important contributors to exposure are cereals and cereal products. If contaminated water is consumed, it becomes the major source of exposure. Important organoarsenicals in the diet are not well characterized toxicologically.
