High molar mass xyloglucan forms loops and tails on cellulose. Low molar mass xyloglucan adsorbs in a flat conformation on cellulose. Tight contact between cellulose layers is achieved by low molar mass xyloglucan. Close association of cellulose prevents swelling and reduces enzyme accessibility.
