Gelation of Gum tragacanth with small amounts of PVA without using other chemicals.

Gelation was investigated at up to four freeze-thaw cycles and two thawing temperatures.

Gel fraction, syneresis as well as mechanical properties and microstructural characteristics of the obtained gels were studied.

Mechanical properties of the gel samples were reinforced by increasing freeze-thaw cycles and decreasing thawing temperature.
