Modeling the survival kinetics of Salmonella in tree nuts for use in risk assessment

We present a framework to derive a Salmonella survival model for tree nuts.

The predictive model considers variability and uncertainty separately.

Higher survival rates were obtained for pistachios, followed by pecans, almonds and walnuts.

The approach applies to any studies that develop models for probabilistic exposure assessment.
