Sorption moisture isotherms for tamarind mucilage showed a sigmoid shape. Sorption moisture isotherms fitted satisfactorily to GAB and Caurie models. The pore size increased with rising temperature and moisture levels from 0.92 to 7.24 nm. The minimum entropy ΔSint reflected the condition of maximum stability of tamarind mucilage. The glass transition temperature decreased with the water activity increased.
