Enhancement of the viability of microencapsulated probiotics in complex biopolymer coacervates. Encapsulated cells metabolized nutrients and multiplied within the coacervate structures. Post culture in coacervates provided significant cell protection to applied stresses. Cells in coacervates embedded in gel microspheres exhibited enhanced viability.
