PEF cossettes were first pretreated by PEF and then pressed to extract 50% of juice.

The remaining sucrose was then extracted from previously pressed slices by diffusion.

The draft can be reduced leading to substantial water and energy savings.

The juice presented better qualitative characteristics’ than conventional one.

The slices were better exhausted by the new extraction process.
