Enzymatic synthesis of 6″-O-acyl-polydatins was explored in 2-MeTHF. The resonance effect in acyl donors produces a negative impact on enzyme behavior. The acylates present much higher pH stability and log P value than polydatin. The lipophilic polydatin sorbate exhibited improved apoptosis-inducing capability.
