Unraveling proteome changes of Holstein beef M. semitendinosus and its relationship to meat discoloration during post-mortem storage analyzed by label-free mass spectrometry
Label-free method was used to assess proteome changes of SM muscle during storage. PCA and HCA results gave clear distinctions among samples of different storage time. Eighteen differentially abundance proteins were closely correlated with a* value. Results implied connections between meat discoloration and a few vital bioprocesses.
