A fungal glycogen branching enzyme from Rhizomucor miehei was cloned and expressed.

The enzyme was characterised and displayed excellent cold adaptation.

The enzyme exhibited ten times higher activity toward amylose than amylopectin.

The enzyme was found to improve bread quality and increase its shelf life.
