Optimization of selenylation modification for garlic polysaccharide based on immune-enhancing activity

Garlic polysaccharide (GPS) was modified in selenylation respectively by four methods.

Contents and yields of selenium and immune-enhancing activities of sGPSs were compared.

Selenylation modification can significantly enhance immune-enhancing activity of GPS.

NA-SS method presented the highest selenylation efficiency and was the best method.

sGPS5 displayed strongest activity and optimal modification conditions were gotten.
