Xanthan gum was produced from glycerol by X. campestris CCTCC M2015714. Molecular weight of xanthan gum from glycerol is half that of the commercial one. Viscosity of xanthan produced from glycerol is far lower than commercial xanthan. Xanthan gum produced from glycerol appears as thin and loose spatial structure.
