Effect of ultrasonication (20 kHz) on various properties of actomyosin were monitored.

CD-spectroscopy and UV-spectra indicates structural changes in actomyosin.

No fragmentation in principal actomyosin polypeptides was observed.

Ultrasonication improves structure and water-holding capacity of actomyosin gels.
