Alginate yield, MW, and M/G ratio were optimized using Box-Behnken experimental design. Alginate with different promising physico-chemical properties was obtained. Alginate exhibited good antioxidant activity at high pH and low thermal treatment. Alginate showed good emulsifying activity against different hydrophobic compounds.
