Luminescence oxygen sensor was used to measure oxygen partial pressure in oily liquids and headspaces. The methodology makes it possible to quantify oxygen solubility in all types of liquids. Henry's constant and solubility of dissolved oxygen were determined for Miglyol and sunflower oil up to 50 °C. For T < 50 °C, sunflower oils solubilize 4 to 5 times more O2 than water does, depending on temperature.
