Oils from plant seeds were obtained by using n-hexane and chloroform/methanol solvents.

Oils extracted from coriander and caraway seeds were source of petroselinic acid.

β-Sitosterol was the predominant phytosterol in all the oil samples.

The content of phenolics was higher in oils extracted with chloroform/methanol.

Antioxidant activity was positively correlated with total phenolics content.
