Leafy vegetables are stored in MAP and CA to preserve quality. Leafy vegetables are subjected to sugar starvation in addition to low oxygen stress. Sugar starvation is slowed down under low oxygen stress. Under low oxygen stress, no switch to alternative sources of substrate. Switch from aerobic to fermentation metabolism.
