Good chocolates were produced using starter cultures of lactobacillus and yeast. MALDI-TOF MS was effective at identifying different microbial species. The chocolate bitter sensation was predominant in inoculated cocoa beans. The dominant yeast were S. cerevisiae and Candida magnolia.
