Porcine and bovine myosin heavy chain (MHC) isoforms were identified by LC-MS/MS. Bovine longissimus muscle did not contain MHC 2b. Label-free quantification allows for the quantification of MHCs. Peak intensity (%) of unique peptide is the most acceptable method for MHC quantification.
