Uniformly sized cholesteric liquid crystal (CLC) double emulsion droplets were synthesized from MLC-2132 doped with CB15 using a microfluidic method. CLC double emulsion droplets were further functionalized with PAA-b-LCP to make them pH-responsive. The helical structure and the reflecting color patterns of the CLC droplets changed because of pH-dependent protonation and deprotonation of the carboxylic group of PAA, which causes the planar and homeotropic orientations, respectively. This pH-sensitive mono-dispersed CLC DEDs have potential to be used as a biosensor by immobilizing ligands causing local pH changes by analytes.
