Heat transfer finite element model of fresh fruit salad insulating packages in non-refrigerated conditions

To maintain the cool chain of fruit salad, packaging effect was investigated by a FEM. The model permitted to easily check several combinations of packaging characteristics. Good agreement was obtained between numerical and experimental results (R2 = 0.98). Convective flux amount in the insulating air layer was evaluated by a specific model. For air layers smaller than 0.013 m, heat was mainly transferred by conduction.
