Foam stability of casein micelle dispersions depends strongly on aggregate size. Nonlinear surface rheology was determined for different casein micelle dispersions. Differences in foam stability were not caused by differences in interfacial rheology. Link between foam stability and thin film stability was confirmed by homogenization.
