LF-NMR was employed to monitor water mobility and distribution in SAPPs.
Four T2 fractions of water were distributed in SAPPs.
The major fraction in SAPPs was bound water, suggesting strong hydrophilicity.
SAPPs with MWs of 1–3 kDa were more stable than the other two samples.
