Performance evaluation of volatile organic compounds by antagonistic yeasts immobilized on hydrogel spheres against gray, green and blue postharvest decays
Entrapment of BCAs into hydrogel spheres maintained yeast viability over time. VOCs released by yeast-inoculated spheres controlled gray, green and blue mold decays. W. anomalus and A. pullulans VOCs showed the best performances against fungal decays.
