    Rosaria Ciriminna is a research chemist at Italy’s CNR. Her research in green chemistry and nanochemistry is developed at Palermo’s Institute of Nanostructured Materials in cooperation with numerous research groups based in Italy and abroad. Rosaria mentors undergraduate and graduate students and sits on European doctoral committees abroad. She has coauthored more than 140 research papers and four books on the topics of her research.

    Alexandra Fidalgo is an assistant professor of statistics at Universidade Europeia-Laureate International Universities and a research assistant at Centro de Química-Física Molecular and Institute of Nanoscience and Nanotechnology at the University of Lisboa, Portugal. Her research interests focus on the synthesis and characterization of advanced functionalized silica-based sol–gel materials for thermal insulation, catalysis, and drug encapsulation.

    Francesco Meneguzzo is a physicist based at Florence’s Institute of Biometeorology of Italy’s CNR where he coordinates a research group active in a vast field of research domains, including energy, propulsion, agri-food processes, and geophysics. His recent achievements include the development of an entirely clean production and sanification process applicable to liquid foods based on hydrodynamic cavitation technology. As a weather forecaster, he has established Tuscany’s Regional Met Service (1996–2002), later to become the well-known LAMMA weather forecast centre. Currently, he chairs the organization committee of the SuNEC 2016 conference on solar energy

    Laura Ilharco is an assistant professor of Physical Chemistry and Spectroscopy at Instituto Superior Técnico, University of Lisboa, Portugal. She also lectures regular postgraduate courses on sol–gel at Portuguese and Mexican universities. Her research on functional silica-based nanomaterials, tailored for numerous specific purposes, is carried out at the Centro de Química-Física Molecular and Institute of Nanoscience and Nanotechnology. Professor Ilharco contributed to more than 100 international scientific publications and in 2003 was awarded the Solvay Ideas Challenge prize.

    Mario Pagliaro is a chemistry and energy scholar at Italy’s Research Council based at Palermo’s Institute of Nanostructured Materials. Developed in cooperation with research groups based in 20 countries, his research in nanochemistry, solar energy, and green, organic, and materials chemistries is described in more than 150 research papers and several book chapters. Often cited for his excellence in teaching and writing, Dr. Pagliaro has coauthored 20 books and gives courses and tutorials on the topics of his research. The SuNEC and FineCat conferences organized by his research Group in Sicily since 2011 are amongst Europe’s leading meetings in solar energy and catalysis.

Lycopene, a carotenoid used as a natural colorant for decades, is a powerful antioxidant abundant in tomatoes and other red fruits. Following studies in the context of health that started some 30 years ago, lycopene is emerging as a valued antioxidant, with many new applications as a nutritional supplement and an active ingredient in cosmetic products. This study provides an overview of the emerging utilization and extraction methods in the context of intense fundamental and applied research that is eventually unveiling the full potential of this important terpene.
