An HPLC procedure utilizing reversed-phase chromatography coupled with acoulometric arraydetection system was developed for the characterization of overallantioxidant status in fruits andvegetables. The method was reliable and sensitive (20 pg to 1 ngdetection limit) and can also beused to identify and simultaneously quantify multi-antioxidantsincluding vitamin C, glutathione,phenolic acids, and flavonoids in fruits and vegetables. Eachfruit and vegetable aqueous extractshowed an unique distribution of chromatographic peaks that could serveas a "fingerprint" for thefruit or vegetable. A significant positive linear correlation wasdemonstrated in fruit and vegetableaqueous extracts between the total antioxidant activities determined byusing oxygen radicalabsorbance capacity (ORAC
ROO)assay and the electrochemical data generated from thecoulometricarray detectors. From these data, theORAC
