This paper describes the application of 1H HR-MAS NMR (high-resolution magic angle spinningnuclear magnetic resonance) to the analysis of durum wheat flours coming from geographical areasof southern Italy. It is possible to obtain one-dimensional spectra with >80 resonances. With thistechnique it is possible to avoid the pretreatment of the samples commonly used in other analyticaltechniques. Using one- and two-dimensional NMR methods, some preliminary spectral assignmentwere carried out. Finally, it has also been possible to apply a multivariate statistical analysis tospectral data in a trial of discriminating between the samples.Keywords: NMR; durum wheat flours; analysis
