Gamma-irradiating barley grains with doses of 10–100kGy, a dose dependent isomerization of the naturally occurring cis-unsaturated fatty acids such as oleic, cis-vaccenic, linoleic and also of linolenic acid was found. Whereas the effect was negligible up to 10kGy, at 50kGy the trans-fatty acid level became comparable to that of other natural products like butter fat which means that there is no essential nutrition danger. The cis–trans-isomerization found in barley grains is explained mainly by a thiyl radical driven process rather than direct isomerization.
