摘要
The investigation on toxicity of stainless steel is reviewed.Many countries established their law to guarantee food security of stainless steel,Development of food safety standards of stainless steels in China are analysed.Influence of stainless steel grades and food ingredient on the release of metal ions has been briefly reviewed.The effect of surface condition on the release of metal ions are analyzed.Finally,the food security issues of stainless steels are systematically presented.
