浅谈现代食品微生物检验内容及技术分析

摘要
近年来,人们的生活水平在不断进步的社会、飞速发展的经济的作用下日益提升,对食品安全检测的标准也日益提升。食品具备的一个必然因素就是食品安全,在世界范围内,各种食品安全事故不断发生,全世界均广泛关注了食品安全问题。近年来,国际卫生组织给予了食品微生物污染问题以充分重视。本研究首先从操作人员与操作细节、检测环境与设施设备、检测设备与检测药品、样品的采集与运输及保存四个方面阐述了现代食品微生物检验的要求,然后从对食品污染程度指示菌的检验、对食品中致病菌的检测两个方面分析了现代食品微生物检验内容,最后从抗体技术、免疫学方法、代谢学方法、分子生物方法、仪器法五个方面探讨了现代食品微生物检验技术。
In recent years,people's living standards have been increasing under the influence of the progressive society and the rapid economic development,and the standards of food safety testing have also been increasing.Food safety is a necessary factor for food. In the world,various food safety incidents occur constantly.Food safety issues are widely concerned all over the world.In recent years,the International Health Organization has paid full attention to the problem of food microbial contamination.This study first elaborated the requirements of modern food microbial testing from four aspects:operator and operation details,detection environment and facilities,detection equipment and detection drugs,sample collection and transportation and preservation.Then,it analyzed the contents of modern food microbial testing from two aspects:detection of indicator bacteria of food contamination degree and detection of pathogenic bacteria in food. Finally,it analyzed the contents of modern food microbial testing from two aspects:detection of food contamination degree and detection of pathogenic bacteria in food Antibody technology,immunological method,metabolic method,molecular biological method and instrumental method were discussed in this paper.
