山核桃壳棕色素保存稳定性的研究

摘要
东北山核桃壳棕色素的稳定性进行了研究。结果表明,棕色素易溶于极性较强的溶液中,不溶于弱极性和非极性溶液中;在4℃和25℃条件下的保存性能良好;对光照不敏感;对氧化剂不稳定,对还原剂相对稳定;Fe3+、Cu2+、Zn2+对色素影响较大,基本不受K+、Na+、Ca2+、Mg2+、Al3+影响。在保存方面,棕色素相对稳定。
        Stability of brown pigment from walnut shell was investigated in this study. Results indicated that this pigment was easily soluble in polar solution but insoluble in weak polar and nonpolar solution. The pigment was stable in storing at 4 ℃ or 25 ℃.It was insensitive to beam. It was unsettled on oxidant but stabilization for reductant. Stability of this pigment was observed and this pigment exhibited better stability in alkaline environments. In addition, Fe3+,Cu2+,Zn2+revealed a color enhancement effect on this pigment, while K+,Na+,Ca2+,Mg2+,Al3+exhibited little effect. It was found that the pigment was stability in store.
