胸椎数对自然放牧条件下乌珠穆沁羊肉品质的影响

摘要
为探讨不同胸椎数对乌珠穆沁羊肉品质的影响,选取自然放牧条件下6月龄和12月龄的13和14胸椎数的乌珠穆沁羊,对其屠宰性能、3个部位(背最长肌、股二头肌、肱三头肌)的物理指标和营养成分进行评价。结果表明:6月龄13胸椎羊背最长肌红度值(a~*)和黄度值(b~*)显著高于14胸椎羊(P<0.05),12月龄13胸椎羊背最长肌的粗蛋白质含量显著高于14胸椎羊(P<0.05),6月龄13胸椎羊肱三头肌中的丙氨酸、异亮氨酸、亮氨酸、组氨酸、成人必需氨基酸及婴儿必需氨基酸含量显著高于14胸椎羊肱三头肌(P<0.05);6月龄13胸椎羊股二头肌中的甘氨酸含量显著高于14胸椎羊(P<0.05);其他指标在相同月龄不同胸椎数间均无显著性差异(P>0.05)。总结而言,胸椎数对相同月龄乌珠穆沁羊的屠宰性能和肌肉系水能力无显著影响,6月龄13胸椎乌珠穆沁羊肌肉的营养价值有优于14胸椎羊的趋势,但不同胸椎数对12月龄羊肉品质的影响较小。
        In order to investigate the effect of the different thoracic vertebrae on meat quality of Ujumqin sheep, Ujumqin sheep with the 13 and 14 thoracic vertebrae at 6 months and 12 months of age were selected, for this, the slaughter performance, physical indexes, nutritional components of three parts(Triceps brachii, Longissimus dorsi and Biceps femoris) were determined. The results showed that the Red value and yellow value in the Longissimus dorsi of the 13 thoracic vertebrae were significantly higher than those of the 14 thoracic vertebrae at 6 months of age(P<0.05). The protein of the Longissimus dorsi of the 13 thoracic vertebrae at 12 months of age was significantly higher than that of the same part of the 14 thoracic vertebrae(P<0.05). In amino acid analysis at 6 months of age, the alanine, isoleucine, leucine, histidine, adults essential amino acids and infant essential amino acids in Triceps brachii of the 13 thoracic vertebrae were significantly higher than those of the Triceps brachii of the 14 thoracic vertebrae(P<0.05); the biceps femoris' s glycine of the 13 thoracic vertebrae was significantly higher than that of the 14 thoracic vertebra(P<0.05); There was no significant difference in other indexes among different thoracic vertebrae in the same age group.(P>0.05). In conclusion, the different thoracic vertebrae has no significant effect on the slaughter performance and muscular capacity(P>0.05).the nutritional value of the 13 thoracic vertebrae's Ujumqin sheep was superior to the trend of the 14 thoracic vertebrae at 6 months of age, but the different thoracic vertebrae had less influence on the meat quality of sheep at 12 months of age.
