羊肉的鉴别方法及其应用现状

摘要
随着肉制品鉴别技术的进步,假羊肉的鉴别手段越来越多样化,鉴别准确率与效率也越来越高。目前,羊肉的鉴别方法主要有感官法、电泳分析法、免疫分析法、PCR法、色谱分析法等,对各种鉴别方法的优缺点进行了分析说明,并对各鉴别方法的应用现状作了简单介绍。
        With the advancement in the identification technology of meat products, the identification methods of fake mutton have become more diversified, and the accuracy and efficiency of identification have become higher and higher.In this paper, the advantages and disadvantages of various identification methods, such as sensory method,electrophoresis analysis, immunoassay, PCR, and chromatographic analysis, were analyzed and explained. The application status of these methods was briefly introduced.
