摘要
为比较海南省两个地方品种(儋州鸡、文昌)胸肌和腿肌氨基酸和脂肪酸含量,试验选取1日龄文昌儋州鸡各50只(公母各半),在相同的营养水平和管理条件下饲养,随机抽取165日龄儋州鸡和文昌各20只(公母各半),分别测定胸肌、腿肌氨基酸和脂肪酸含量。结果表明:儋州鸡与文昌胸肌、腿肌各项氨基酸、必需氨基酸(EAA)、氨基酸总量(TAA)、必需氨基酸/氨基酸总量(EAA/TAA)以及鲜味氨基酸(FAA)差异均不显著(P>0.05)。儋州鸡胸肌十五碳酸(C15∶0)(P<0.01)、腿肌十二碳酸(C12∶0)(P<0.05)、十七碳酸(C17∶0)(P<0.05)显著高于文昌,文昌胸肌、腿肌二十二碳五烯酸(C22∶5)极显著高于儋州鸡(P<0.01),其余各项脂肪酸、饱和脂肪酸(SFA)、单不饱和脂肪酸(MUFA)、多不饱和脂肪酸(PUFA)含量在两个品种间差异均不显著(P>0.05)。结果表明,儋州鸡与文昌肌肉,风味和营养价值基本一致。
        To study the amino acid and fatty acid composition of muscle between two local breeds(Danzhou chicken and Wenchang chicken) in Hainan province, 50(male and female in half)1-day-age chickens from each breed were selected and raised under the same management and feeding condition. At the age of 165 days, 20 Danzhou chicken and Wenchang chicken were randomly selected respectively, and the amino acid and fatty acid composition in breast muscle and leg muscle were determined. The results showed that the contents of amino acids, essential amino acids(EAA), total amino acid(TAA), essential amino acids(P>0.05), essential amino acids(EAA/TAA) and flavor amino acids(FAA) in breast muscle and leg muscles between Danzhou chicken and Wenchang chicken were not significantly different(P>0.05). The pentadecanoic acid(C15∶0)(P<0.01) in breast muscle, dodecanoic acid(C12∶0)(P<0.05) and heptadecanoic acid(C17∶0) in leg muscle of Danzhou chicken were higher than that in Wenchang Chicken(P<0.05).While the docosapentaenoic acid(C22∶5) in breast muscle and leg muscle of Wenchang Chicken were higher than that in Danzhou chicken(P<0.01). The remaining fatty acids, saturated fatty acids(SFA), monounsaturated fatty acids(MUFA)and polyunsaturated fatty acids(PUFA) were not significantly different between the two breeds(P>0.05). The results suggested that Danzhou chicken was similar to Wenchang chicken in flavor and nutritional value of muscle.
