摘要
将用粮谷自然发酵的原酒,按不同的香味口感分别贮藏后,根据酒质标准的要求,酒与酒之间按相应比例进行配比,这一工艺过程称为勾兑。勾兑是酒质稳定,固定风格独特不可缺少的重要工艺,不仅是一门技术也是一门艺术。气相色谱分析技术在白酒行业的应用,揭开了中国白酒勾兑工艺的神秘面纱,也认证了中国白酒香型理论的正确性,为中国白酒勾兑的理论奠定了基础。勾兑工艺是宝贵的中华酿酒文化遗产,是一代代酿酒人的心血结晶,酿酒人应不断努力,把勾兑这一技艺传承并发杨光大。
        The original liquors that are made from naturally fermented grains are stored separately according to the taste of the different flavors. After storage, different liquors are proportioned to the corresponding ratio according to the requirements of the quality standard. This process is called blending. Blending is an important process for the stability and unique style of the liquor. It is not only a technology but also an art. The application of gas chromatography analysis technology in the liquor industry has unveiled the mystery of the Chinese liquor blending process, and also certified the correctness of the Chinese liquor flavor theory, laying the foundation for the theory of Chinese liquor blending. The blending process is a valuable cultural heritage of Chinese liquor making. It is the culmination of the generation of brewers. The brewers should constantly strive to pass on and promote this skill.
