摘要
利用地面成像光谱辐射测量系统(Field Imaging Spectrometer System,FISS),通过连续地采集冷鲜猪肉样本的成像光谱数据,开展了猪肉新鲜度检测及时空特征分析研究;基于猪肉新鲜度光谱特征指数(Fresh Index,FI),提出了一种考虑样本整体新鲜度的均一化猪肉新鲜度指数(Pork Average Fresh Index, PAFI),结果表明:(1)FISS采集的成像光谱数据能够较好的反映猪肉样本新鲜度的变化过程,并能够对同一猪肉样本新鲜度的空间差异性进行探测;(2)PAFI指数能够有效地表达同一猪肉样本整体的新鲜度变化过程,相较于FI指数具有更加稳健的探测效果。本文为高光谱成像技术在肉类食品安全检测领域的应用提供了重要的理论和方法支撑。
The Field Imaging Spectrometer System(FISS) was used, and the imaging spectrometer data of chilled pork samples were collected continuously, and pork freshness detection and spatial-temporal feature analysis wasdeveloped.Based on the Freshness Index(FI), a Pork Average Fresh Index(PAFI) that considered the overall freshness of the sample was proposed.The results showed that:(1)The imaging spectrometer data collected by FISS could better reflect the change process of the freshness of pork samples, and it could detect the spatial difference of the freshness of the same pork samples.(2)The PAFI index could effectively expresschange process of the freshness of the same pork sample as a whole,and it had a more robust detection effect than the FI index.This paper provided important theoretical and methodological support for the application of high spectrometer imaging technology in the field of detection of meat food safety.
