摘要
蜂胶具有广泛的生物学活性,但蜂胶在水中的溶解度极低,稳定性差,生物利用度低,因此其应用受到限制。如何使蜂胶均匀地分散于水中,对于蜂胶产品的开发和发挥蜂胶的保健功效有着重要的价值。该文介绍了水溶性蜂胶加工工艺的研究进展,重点介绍了使用乳化剂制备水溶性蜂胶的技术方法,评价了该技术用于蜂胶的适用性和存在的问题,旨在为蜂胶的深入研究和加工利用提供参考。
        Propolis is a kind of bee products with various biological activities. Its application was limited,because of its poor solubility in water, low stability and bioavailability. How to make water-soluble propolis is very important for the development of propolis products and its health function.The research progress on the processing technology of water-soluble propolis was reviewedin this article.The research of water-soluble propolis using emulsifier was focused, and the applicability and problemof this technology for propoliswas evaluated,aimed to provided reference for the future research andapplications of propolis.
