摘要
以广西特有毛葡萄品种‘野酿2号’为样本,用自配硒肥和"中农6号"两种硒肥喷施叶片和幼果,测定成熟果实及其葡萄酒的理化指标和硒含量。结果表明,‘野酿2号’对"中农6号"吸收效果明显,喷施1~3次鲜果硒含量分别达到0.038 mg/L、0.048 mg/L、0.051 mg/L;均高于0.01 mg/L的富硒食品标准;而酿制的葡萄酒中硒含量大幅度减少,只有喷施2次和3次的勉强达到富硒饮品标准;通过对成品酒盲评可知,随着富硒处理次数的增加,葡萄酒生青味减淡,酸涩感变弱,成熟浆果味略有凸显,风味、口感改善明显。因此认为,"中农6号"有机硒肥对‘野酿2号’富硒作用显著,喷施2次及以上的葡萄酒风味得到明显改善。
        'Yeniang 2', a special native grape variety in guangxi, as the experimental sample, self-made selenium fertilizer and "Zhongnong No.6" selenium-enriched fertilizer were sprayed on the leaves and young fruits to observe the situation of selenium enrichment in grapes, and determine the physical and chemical indexes and selenium content of ripe fruits and wine. The results showed that the selenium fertilizer "Zhongnong No.6" was absorbed effectively on 'Yeniang 2' grape, and the selenium content of fresh fruits reached 0.038 mg/L, 0.048 mg/L, 0.051 mg/L, respectively,after the selenium enrichment treatment with spraying 1-3 times. All of them were higher than the standard of 0.01 mg/L for selenium rich foods. The selenium content in the ?nished wine was greatly reduced, and only two or three times of spraying could reach the standard of selenium-rich drinks. According to the blind evaluation of the finished wine, with the increase of the times of selenium-rich treatment, the raw green taste of the wine decreased, the sour and astringent taste became weaker, the mature berry taste became slightly prominent, and the ?avor and taste improved obviously. Therefore, it is believed that "Zhongnong No.6" organic selenium fertilizer has a signi?cant effect on the selenium enrichment of 'Yeniang 2' grape, and the wine ?avor could be signi?cantly improved by spraying it twice or more.
